I made these burritos last night and everyone in my house loved them! With a bunch of tiny picky eaters, this is no easy feat!
These are super quick and easy to make!
Ingredients:
8 eggs
3 tablespoons reduced fat (2%) milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 pound Spicy Sausage, thawed if frozen
1 cup chopped yellow onion & red peppers
7 Medium Soft Taco flour tortillas, warmed
1 cup shredded Fiesta Blend cheese
1 Jar Casa Mamita- Medium Chunky Style Salsa
1. Whisk together eggs, milk, salt and pepper in medium bowl until blended; set aside.
2. Heat large nonstick skillet over medium-high heat. Add spicy sausage; cook 5 minutes, stirring occasionally. Add onion and peppers; cook 2 minutes more or until onion is tender and sausage is crumbled and no longer pink. Drain. Remove mixture from skillet; set aside and keep warm.
3. Add egg mixture to skillet; cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until almost set.
4. Mix everything together and spoon about 1/2 cup of mixture down center of each tortilla. Top evenly with salsa and more fiesta blend cheese (if desired). Fold in opposite sides of each tortilla; roll-up burrito-style. Cut in half to serve.
I would say wrap the remaining for leftovers, but there weren't any in my house! We ate them all! :-)
